Cruschi Peppers are fried, sun-dried Peperoni di Senise – a sweet pepper that probably arrived in Southern Italy with the Spaniards, who brought it there from the Antilles. Peperoni di Senise are a cornerstone of Basilicata's rustic cuisine. The peppers are hung on long ropes and left to dry in the sun, which further concentrates their taste. The dried peppers are then fried in olive oil to make cruschi Peppers. Crunchy and savoury, cruschi peppers are Basilicata's most addictive snacks, perfect as an appetizer alongside a glass of red wine.
