Mortandela is an exquisite salame from Trentino, whose fame has not gone beyond its regional borders yet. In the past, it was traditional for families from the Non Valley to buy a suckling pig at the All Saints’ Fair in November and raise it for 12 months with potatoes, vegetables, bran and hay. Its meat was then used to make an unusual meatball-shaped cured meat called mortandela, which was sprinkled with buckwheat flour, laid out on wooden boards and smoked.
