For a food lover, Liguria brings to mind fragrant and savory focaccia and the tasty pesto sauce used to flavor the region’s typical pasta, such as Trofiette or Croxetti. The incredible variety of vegetables, herbs, and fish available in this beautiful region is found in some of the most well-known dishes of its cuisine, such as Cappon Magro, a kaleidoscope of little vegetables and fish cooked in olive oil.

Traditional Genoese Pandolce nibbles
It was made by local peasants and used by aristocratic families as a display of wealth and status. Croxetti were traditionally made pressing a thin sheet of pasta between two wooden molds engraved with the family's coat of arms on one side and, frequently, the symbol of the Christian cross on the other side. The result is a unique type of pasta!
This typically Genoese fruit cake dates back to the 16th century and may have originated in Persia. Genoese tradition calls for the youngest member of the family to carry the Pandolce to the table, along with a sprig of laurel to symbolize wealth and good luck, while the oldest member is in charge of cutting it into portions. The sweet blend of flavors includes pine nuts, orange and raisins. Each nibble of this delightful treat reveals the sweet tastes and flavors of Liguria.
This rare red wine is made from the mildly aromatic Rossese grape variety, planted only in a tiny fraction of the world's vineyards and yet deserving a great deal of respect from wine experts. In fact, Rossese di Dolceacqua is arguably the finest red wine made in Liguria, though the Rossese grapes are originally from nearby Provence, France. The very limited production of this Angé selection is the result of the relentless, experimental work conducted on the Rossese grape variety by Maurizio Anfosso.
