In Sicilia, pistachio harvesting is carried out by hand every two years, between the end of August and the beginning of September. The plants are usually located on steep lands and this makes the collecting process difficult and, sometimes, even dangerous. The pistachio pickers are equipped with a bag, hanging from the neck thanks to a strap, where they put the pistachio branches and then drop the pistachios one by one. Once the fruit is harvested, the hull is removed and the pistachio is dried for at least two days under the sun. This allows pistachios to preserve their fantastic flavour and texture for a long time.
